You can't just pull the plug or power off mid game like you did with original consoles. This is the process it sounds like your wife skipped. Once you're back in EmulationStation RetroArch will have actually gone through the process to write your in game saves to the SD card. Unlike real consoles that immediately store this save information, RetroArch limits the number of writes it does to your SD card, and only really saves that information when you properly exit RetroArch (Start & Select by default). Like if you use a save point or check point, that in game save is saved to RAM. RetroArch saves in your RAM (temporary memory) whenever you save in game. It 99% sounds like your wife just pulled the plug after saving in game, and never exited RetroArch (or EmulationStation) which you need to do to really "save" your in game saves.

You should hit start, and select shutdown when you're in EmulationStation. It is possible to lose the entire contents of the card, saves/games/config, by pulling the plug. You should do the proper shutdown to keep from corrupting your SD card.
